Equal parts Italian and Breton, Denis is a true epicure. In 2002, he opened Chez Monsieur (Royal Madeleine) to share his passion for food and wine.
Carole, our Executive Director, is 100% breton but Parisian by adoption. She began her career with Guy Savoy, Michel Rostang and Manuel Martinez, among others.
Carole managed our bistrot with passion since 2004 until the opening of our one Michelin Star restaurant "Les Climats" in 2013 on the left bank.
